Resolute Dining Facility teams up with Joint Culinary Center of Excellence

The 7th Transportation Brigade (Expeditionary) Resolute Dining Facility opened their kitchen to a team of culinary specialists from the Joint Culinary Center of Excellence at Fort Eustis, Oct. 1. The culinary team and Resolute staff partnered together to prepare the day's lunch menu with a fresh look.

The culinary specialists worked alongside the JCCoE team to read and calculate the menu cards in preparation for the lunch menu. Special touches were added to make the overall presentation of the lunch menu stand out.

U.S. Army Master Sgt. Orlando Akins, 7th Transportation Brigade (Expeditionary) chief food operations noncommissioned officer, said he was eager for his staff to work alongside the team to gain a new perspective on how to prepare and present meals.

"What we do daily effects morale," said U.S. Army Chief Charles Talley Jr., JCCoE chief. "Whether it be a person that's out on the battle field, or the young man or woman that leaves out of this facility that goes back to work at the motor pool or that S-1 shop, what we do in food service impacts them."

U.S. Air Force Master Sgt. Brent Kozen, JCCoE noncommissioned officer-in-charge, encouraged the Soldiers to incorporate what they learned into their everyday work habits.

"Take what you learned today and implement those things every single day [because] you impact everyone that comes in here," said Kozer. "The diners notice the little things that we did today to help you all improve the appearance of your meals."

By the end of the day's project, the lunch menu was presented with fresh, garnished dishes in an effort to boost overall appearance of the meal choices.
